Sun Valley Smoked Trout Omelette

A quick, protein-packed breakfast or brunch with the rich, savory flavor of smoked trout.

Ingredients:
6 eggs
Salt and pepper, to taste
3 fillets Sun Valley Smoked Trout – choose your style:
Original for a smooth, traditional flavor
Cracked Pepper for a sharper, more robust taste
Cajun for a spicy, flavorful punch
50g feta cheese, crumbled
6 spring onions, finely chopped
1 tsp olive oil
Here are the directions:
Whisk eggs with salt and pepper.
Heat olive oil in a non-stick pan. Pour in eggs and cook over medium heat.
Place Sun Valley Smoked Trout evenly over the eggs.
Sprinkle with feta and half the spring onions.
Cover and reduce heat; cook until eggs are set. If needed, finish under the grill for a few seconds.
Slice into wedges, garnish with remaining spring onions, and serve with rye bread.
