Ever put Sun Valley Smoked Trout in your Omelette?
Well now you can with this great recipe!
Smoked trout omelette:
6 eggs Salt and pepper to taste 3 fillets of smoked trout, thinly sliced 50 g feta cheese, crumbled 6 spring onions, finely chopped
Here are the directions:
Whisk 6 eggs. Transfer to heated non-stick pan with 1 teaspoon olive oil.
Place pieces of trout evenly in egg mixture into pan.
Sprinkle feta cheese and half the spring onions on top.
Cover the pan and reduce the heat. Let stand until egg is cooked through.
You may need to finish off by putting the pan under the grill for a few seconds if egg does not cook properly on top. To serve, slice in wedges, serve with rye bread and sprinkle with remaining spring onions for garnish.
