Sun Valley Smoked Salmon Potato Hash

A hearty skillet breakfast or brunch featuring crispy potatoes, caramelized onions, and Sun Valley Smoked Salmon.
Ingredients:
1 Tbsp. vinegar
2 lb. russet potatoes, diced into 1/2-inch cubes
3 Tbsp. + 2 tsp. olive oil, divided
1 yellow onion, chopped
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. black pepper
4 oz. Sun Valley Smoked Salmon, broken into pieces
2 Tbsp. fresh dill, minced
Directions:
Boil potatoes with vinegar in salted water until just tender (8–10 min). Drain.
Heat 2 tsp. olive oil in a skillet; cook onions until caramelized. Add garlic and cook 30 sec. Remove from skillet.
Add remaining 3 Tbsp. oil; fry potatoes until golden and crisp (15–20 min).
Stir in onions, Sun Valley Smoked Salmon, dill, salt, and pepper. Serve warm.
