Sun Valley Smoked Salmon Potato Hash

A hearty skillet breakfast or brunch featuring crispy potatoes, caramelized onions, and Sun Valley Smoked Salmon.


Ingredients:

  • 1 Tbsp. vinegar

  • 2 lb. russet potatoes, diced into 1/2-inch cubes

  • 3 Tbsp. + 2 tsp. olive oil, divided

  • 1 yellow onion, chopped

  • 2 cloves garlic, minced

  • 1/2 tsp. salt

  • 1/2 tsp. black pepper

  • 4 oz. Sun Valley Smoked Salmon, broken into pieces

  • 2 Tbsp. fresh dill, minced


Directions:

  1. Boil potatoes with vinegar in salted water until just tender (8–10 min). Drain.

  2. Heat 2 tsp. olive oil in a skillet; cook onions until caramelized. Add garlic and cook 30 sec. Remove from skillet.

  3. Add remaining 3 Tbsp. oil; fry potatoes until golden and crisp (15–20 min).

  4. Stir in onions, Sun Valley Smoked Salmon, dill, salt, and pepper. Serve warm.
